I used to run the Dunlop 773 on my 01 conversion. It worked really well in the sand, but did wear fast. Oh yeah, it comes in a 120/80-19.

I used the FMF Turbine core off of the 1990-2001 CR500. It did need some reworking though. I don't think you will find anything that will fit really well that is off of the shelf.

Bob is right. Install the 125 spacers and drop the motor in. You will be good to go at that point. No shimming or grinding needed.
