Smoking...meats!

I have always liked smoking up a batch of beef jerky, or smoked salmon, but about a year ago I finally got tired of having to re-load the Little Chief brand smoker I'd had for about twenty years. A family at the end of our driveway had a hot water heater set out to be taken away, and when I drove buy it, wonderful visions filled my head. So I liberated it and went to work with the sawzall and welder and built me a bigger smoker.
That was the beginning. I am now finishing up my second, even bigger unit, which is a compbination wood/bricquet/propane unit with a detached firebox and nearly 3300sq." of grill space.
I've been smoking everything from beef jerky to sausages, pork ribs...oh! I need to go fire the bitch up right now!!!

I seldom take any of my bikes afield without a pocket full of jerky. It's the original trail-mix. If it was good enough for John Wayne, it's good enough for me!

I smoked two 10 pound Pork Shoulders and some Atomic Buffalo Turds this past weekend in New Mexico. I hooked the old man up with a Brinkmann Smokin Pit. Works ok and did the job. Mine is 1/4" steel and holds the heat very well with no leaks for a good slow burn. Kinda use to it.

Meat in the pics look good. Did you use a rub?

I found this place in Yelm, Washington (Stewarts Meats). A bunch of guys told me I need to go check it out since I like to BBQ so much. WHOAAA! They had a smoker fired up....my kinda place! I bought a 11 pound Pork Shoulder, Ground Buffalo, Jalapeno Summer Sausage, 5 pounds of Home Made Brauts and 5 Deer Sausages. I just cut a few slices of Deer Sausage and threw a few saltines on the plate....OMFG! That was some of the best stuff I have ever had. I have eaten a lot of Elk and game in general. This stuff stands alone as being some of the best. I dig this place more everyday. I just wish they'd drive better. :lol:

If you need a smoker, check out Cookshack.

They work really well.
The beef ribs are peel off the bone & you don't need to boil them first.
I make smoked jalapenos that will light you up
