Is it possible to remove the entire flywheel / stator assembly and put it back on without altering the timing adjustment?

yea... the timing pickup is screwed into the ignition backing plate.
you can pull the flywheel without removing it.. you could even remove the backing plate without moving it. but you would then need to detach the wires from the bike and take them with the plate.
