Vicki's Salsa

Riding season is here... Gotta' have some chips and salsa in the staging area.... and my wife makes the best Salsa.... bar none.

Here's her secret recipe:

4 Large Cans ( 15 0z.) Peeled tomatoes
1 Large Can ( 15 Oz.) Tomato Sauce
2 Large Yellow Onions
2 Bunches Green Onions
1 Large Can ( 7 Oz.) Jalapenos ( or freash if available)
1 Bunch Cinantro
2.5 tbsp. Cumin
1.5 tbsp. Crushed Oregano
1 tbsp. Black Pepper
2 tbsp. Tabasco
A few "Heavy Squirts" Tapatio ( or to taste)
1/4 cup salt
4 tbsp. Fresh Garlic ( or to taste)

CHOP: Onions, Jalapenos, and Cilantro

BLEND: Tomato's, Garlic

MIX: All ingredients including spices.

Tips? Light on the Oregano and Black Pepper, Heavy on the Garlic works best!

Full flavor comes in after a few days. Mix 3 days before use for best results....

Yep, this stuff is great. The quart I made last night is history... made another tonight. I substituted the tomato sauce for tomato paste to thicken it up just a little bit... worked great, tastes great!

Hoons have enough trouble opening cans.... you think they have the time, or inclination, to go produce shopping.

Next thing on your fantasy list is for them to wash their hands....
