If you can brown smoked sausage, hamburger and open a can, your a chef.

Danger’s MX Santa Fe Stew

This will fit into a 6 qt. crock pot.
Always double/triple for a crowd. (I use Rival brand 22 quart cooker.)
It’s better if you make it before you go to bed. Set on Low, ready for an early lunch.
When you go riding leave it cooking until your ready to leave.
Load it last into the truck. Rubber band the lid, making
sure it won’t tip over. Cover/wrap with a thick towel. It will still be hot at lunch time break.

1 pound lean ground beef
1 1/2 links (one pack) Eckrich Beef Smoked Sausage, cut into slices. I always double this.
1 onion, chopped.
3 to 4 pods garlic, minced.
1 large can stewed tomatoes 28oz. or 2- 14.5oz. cans.
1 can whole kernel sweet corn 15oz.
2 cans jalapeno pinto beans 15oz. If you can’t handle the heat get regular pinto beans.
1 can dark red kidney beans 15oz.
1 can Rotel tomatoes 10oz. (Get the “EXTRA HOT” Rotel).
1 large pack Original Ranch dressing mix, dry (comes as 2 pack joined together).
1 pack taco seasoning (If you got the “EXTRA HOT” Rotel get the HOT taco seasoning).

Cook the ground beef and drain. Add to crock pot. Brown the sliced smoked sausage and drain. I like to blacken the edge of the sausage, then drain. Add to crock pot. In the same pan, cook the onions for a while, when they are ½ way done add the garlic. Cook a little longer and add
to crock. Do not drain the cans. Add all remaining ingredients to crock.
Stir and mix real well.
Set on Hi, ready in 3 to 4 hours.

To remove any fat, cool and skim top.

Corn Sticks
2 cups of Bisquick.
1 small can creamed corn.
8 tablespoons melted butter.

Mix 2 cups Bisquick and corn. Knead on floured board 15 times.
Roll into 6" x 10" rectangle. Melt butter in 6" x 10" flat
Casserole dish. Place corn stick mixture in casserole. Flip over and
cover with butter. Cut mixture into 1" x 3" sticks. Makes 20 sticks..
Bake in 450 deg. oven for 10 to 12 minutes.

All of this serves 6 to 8 people.
