What part of the piston do you machine out to lighten it and can you always use your stock/previous piston as a benchmark?

Shoulder alright yet? Why are there indentations above the exhaust ports? I have the same in my cylinder and got a bit concerned at first but it seems I'm not the only one who has them... Today I finally got to test my CR properly with studded tires on a lake nearby. Unfortunately I forgot to cover the back brake. Ah well, the rear fender was awfully scratched anyway. What year 250-fender fits/looks best?
